If the oil is not hot, the aloo tikki will soak oil and will not turn out crisp. Adding tikkis in cold oil might also break them and make them oily and soggy. Adding a binding agent like rice flour or cornflour makes sure the tikkis doesn’t break while frying and they also make them crispy.
